COR RÖMIGBERG Cabernet Sauvignon

The spectacular steep slope of the Römigberg vineyard on Lake Caldaro comes very close to our ideal of a closed farm organism, in which the coexistence of humans, animals and plants plays an important role. Cows and oxen graze among the vines and olive trees. In 1986, this area, aptly named “Cor” (Latin for “heart”), was planted with Cabernet Sauvignon and Petit Verdot.

Soil

Under the morenic deposit with loamy content, rocky and gravelly dolomitic limestone

Vinification

Spontaneous grape mash fermentation - partially on the entire grape in stainless steel tanks and in casks. Aging in small and large cask for several month. Aging in the bottle for about one year.

RÖMIGBERG Schiava

We give the RÖMIGBERG Schiava time to mature in the cellar, enhancing its complexity while retaining the grape variety’s characteristic lightness. This versatile red is perfect for various occasions. We drink it chilled on hot summer days, but it is also an elegant accompaniment to a meal.

Fermentation: extended maceration and fermentation, partly in wooden fermenters.
Maturation: partly in stainless steel tanks and partly in large casks, with certain components in contact with the skins and stems for 6 months.

The Römigberg Estate

The Römigberg vineyard is located on a spectacular steep slope on Lake Caldaro. The location is characterised by a diverse blend of soil types and varying climatic conditions. The vineyards, which face south-southeast, receive intense sunshine and are influenced by a warm, Mediterranean climate. The subsoil is a mix of dolomite limestone and remnants of ancient glacial deposits. The Römigberg thus offers a unique climatic and geological playground.
